It's time to get your cake on!


I'm working on our September's newsletter, The Pipeline, and I've declared September Cake Month! I've made for my kids for their birthdays from the very beginning, and all of my cakes in the future will be gluten free, so I'll be posting gluten free cake recipes in the near future.

Guidelines for celiac testing


Aloha everyone !


I've been asked by many parents about how do you know if your child needs to be tested and what are the signs and symptoms of celiac. I always tell them that the signs are numerous but I wanted to include a few of the classic and most common signs and symptoms of celiac and gluten intolerance's.


Among babies, symptoms may include pain in the abdomen or diarrhea that may be bloody. Babies may also stop growing and fail to gain weight.
Among young children, symptoms may include nausea, loss of appetite, sores in the mouth,
anemia and skin rash.
Children who become malnourished from celiac disease may have thin thighs, a small bottom, and a large, swollen belly.
Among
teens, symptoms may include stunted growth, delayed puberty, and hair loss.
Lactose intolerance.
An itchy, blistering skin problem.

Gluten free Pizza


I just got an email from Buddy's Pizzeria (Rated Detroit's #1 Deep Dish Pizza) informing me that they now carry a Gluten Free Square! How exciting! For those of you that don't know what Buddy's is, let me tell you that it is only one of the best pizzas in Michigan! WOW! It has an amazing crispy crust that I think is sprinkled with lemon. It has an awesome cheese that doesn't taste like any other cheese I've had, and the pizzas come in square deep dish. Simply amazing. I am so excited to try this gluten free version, so I'll let everyone know how it is.

Gluten free pizza recipe!


Aloha everyone!

As you know, August is pizza month here at the shack, so I've been working on some great pizza recipes in our kitchen and I'd like to share one with you now.

I started off by using our Gluten Free Pizza Crust Mix , which happens to be the prize you will win for FREE if we choose your pizza recipe for our Gluten free pizza recipe challenge. It's delicious and easy to make.

THE CELIAC SHACK'S ALFREDO PIZZA ~
Prepare the Crust using Tastefully Gluten Free Pizza Crust
Pre-bake the crust according to the directions
Prepare Alfredo Sauce (Full Flavor Foods)
Flatten the crust in a pan
Spread the Alfredo sauce over the crust
Liberally cover the pizza cheese on top of the Alfredo sauce
Slice a tomato thinly and place on top of the cheese
Rinse Basil and cilantro leaves and place on top of the tomatoes
Add black olives
Add artichokes
Add chopped garlic (As much as you like)

Bake for 10-15 minutes at 350 degrees or until the cheese is bubbly!

It's an amazing pizza with a ton of flavor and it's a specialty pizza that is so easy to make!

What your kids should tell their teachers!


It's almost back to school time, and I have been speaking with many parents that are finding the school year to be a stressful time with kids that are living gluten free. I have done some research and found a great link that contains information that your children can tell their teachers, cafeteria workers, bus drivers, and other kids at school to help make everyone understand Celiac disease better.

You can even just print out the letter that is provided and have your child give it to their teacher so they don't have to remember all the details. It's very informative and important for all kids to have a safe environment at school. It will make your and their life much easier come school time.

Grilling for Gluten free kids~


My kids LOVE hot dogs, and since most hot dogs are not gluten free, I have come up with a solution to fulfill their desires, and keep their favorite foods gluten free. They never know the difference between the old hot dogs and the Jennie-O Turkey Franks that I've been substituting in their place.
